Rainbow Veggie Wraps

Ingredients:

  • 1 whole wheat tortilla
  • 2 tablespoons hummus
  • 1/4 cup shredded carrots
  • 1/4 cup sliced bell peppers (red, yellow, green)
  • 1/4 cup baby spinach leaves
  • 1/4 cup shredded purple cabbage
  • 1/4 cup cucumber slices
  • 1/4 cup cherry tomatoes, halved
  • 1/4 avocado, sliced
  • A pinch of salt and pepper
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon lemon juice (optional)

Instructions:

  1. Prep the Veggies: Wash and prepare all the vegetables. Shred the carrots and cabbage, slice the bell peppers, cucumber, and avocado, and halve the cherry tomatoes.
  2. Spread the Hummus: Lay the whole wheat tortilla flat and spread the hummus evenly over the entire surface.
  3. Layer the Veggies: Starting at one end of the tortilla, layer the vegetables in rows. Begin with the shredded carrots, followed by the sliced bell peppers, baby spinach leaves, shredded purple cabbage, cucumber slices, cherry tomatoes, and avocado slices.
  4. Season and Dress (Optional): Sprinkle a pinch of salt and pepper over the veggies. Drizzle with olive oil and lemon juice if desired for extra flavor.
  5. Roll it Up: Carefully roll up the tortilla tightly, starting from the end with the veggies. Make sure to tuck in the sides as you roll to keep all the ingredients inside.
  6. Slice and Serve: Once rolled, use a sharp knife to cut the wrap into smaller, kid-friendly pieces.
  7. Enjoy: Serve the rainbow veggie wraps with a side of fresh fruit or a small cup of yogurt for a complete meal.
